Our vineyard, behind the winery, in Carneros is where the Chardonnay is harvested; the Pinot Noir comes from our cool climate Sonoma Coast vineyard in the Petaluma Gap. The PetGap vineyards vary from shallow hillsides to deeper and richer valley plantings. The Carneros vineyards are planted in rocky soil and produce a small but intensely flavorful yield. Both vineyards are fog covered, often until noon, during the growing season. The benefit of these cool growing conditions is a long ripening season adding to the grapes’ flavor intensity.
Grapes were destemmed and pumped directly to the press. The Pinot Noir and Chardonnay were fermented separately. This allowed us the opportunity to choose the best blend percentages. The juice was settled for 24 hours, chilled to 50 degrees and racked off the solids to the fermenting tank. The juice was then inoculated with wine yeast and fermented cold. The wine was fermented in the bottle and received a minimal “dosage” so this dry sparkling cuvée is fresh, crisp and vibrant.
Tiny bubbles race to the surface of your glass waiting to tantalize your palate. Lovely aromas of toasted bread waft the nose and are followed by crisp, bright citrus flavors.
