Chocolate Late Harvest Mourvèdre Mousse

4 egg yolks In the top of a simmering double boiler, combine egg yolks and sugar and whisk until smooth. Continue to heat, whisking until thickened. Add chocolate and butter and stir with a rubber spatula until chocolate is completely melted. Remove from heat. Stir in Late Harvest Mourvedre and vanilla and cool to room temperature. |
