It's never too late for Mousse

 
 

Chocolate Late Harvest Mourvèdre Mousse


Serves 6

 

4 egg yolks
½ cup sugar
10 oz bittersweet chocolate
3 Tbsp butter
1 Tbsp vanilla
¾ cup Late Harvest Mourvèdre
3 cups heavy whipping cream

In the top of a simmering double boiler, combine egg yolks and sugar and whisk until smooth. Continue to heat, whisking until thickened. Add chocolate and butter and stir with a rubber spatula until chocolate is completely melted. Remove from heat. Stir in Late Harvest Mourvedre and vanilla and cool to room temperature.
Whip cream until thick but not stiff. Gently fold whipped cream into cool chocolate mixture and divide into 6 stemmed glasses. Garnish with chocolate shavings or a dollop of whipped cream.
