1 12-oz pork loin
6 oz prosciutto
1 pkg Boursin cheese (garlic and herbs)
1 sheet of puff pastry
1 egg white

Slice pork loin lengthwise a quarter of the way in from top to bottom; stuff with Boursin cheese. Wrap pork loin in thinly sliced prosciutto and sear in a skillet for 5 to 8 minutes. Remove from skillet and wrap in puff pastry. Brush with egg white diluted with a tablespoon of water. Chill for 1 hour

Preheat oven to 400 degrees. Place pork on baking sheet lined with parchment paper. Bake for 30 to 35 minutes or until pastry is a golden brown. Let rest for 5 minutes then slice into 2-inch servings. Pour yourself a glass of Cashmere and enjoy!
