Easy and impressive

pork wellington



1 12-oz pork loin
6 oz prosciutto
1 pkg Boursin garlic and herb cheese
1 sheet of puff pastry
1 egg white

Slice the pork loin lengthwise a quarter of the way in from top to bottom. Stuff with Boursin cheese. Wrap pork loin in thinly sliced proschiutto and sear in a skillet for 5 to 8 minutes. Wrap pork in puff pastry. Brush with egg white diluted with a table spoon of water.
Chill for 1 hour

Preheat oven to 400°. Line baking sheet with parchment paper and bake for 30 to 35 minutes (or until the pastry is a golden brown). Let rest for 5 minutes then slice into 2 inch serving portions. Pour yourself a glass of Cashmere and enjoy!
