Mediterranean “Tostadas”Recipe compliments of Raley's Something Extra (Late Summer 2008 edition) and Food Editor Patty Mastraccoserves 4 Prep time: 15 minutes Cook time: 5 minutes |

| 2 pita bread rounds 1 ¼ cups prepared hummus 2 cups shredded romaine lettuce 2 cups coarsely shredded rotisserie chicken, chilled ½ cup each: ¼ -inch red bell pepper and red onion, diced ¼ cup light olive oil vinaigrette Carefully cut around the edges of each pita circle to form 2 circles. Spray with nonstick cooking spray and grill or broil for 1 to 2 minutes on each side or until crisp and golden brown. Remove from grill and place 1 pita circle on each plate. Spread with equal amounts of hummus. Toss remaining ingredients in a medium bowl and place over hummus. |
