Our Gewürztraminer grapes come from two estate vineyards – one on the eastern edge of the Petaluma Gap, and the other in Sonoma-Carneros. Both vineyards are considered cool growing regions, with morning and evening fog rolling in during the growing season. Cooler conditions extend the ripening season and preserve the natural acidity of the grapes.
The grapes were handpicked and de-stemmed without crushing and immediately pumped to our tank press where the juice was gently squeezed from the berries. The juice was then pumped to a stainless steel fermentation tank where it was chilled and settled for two days, then racked off the grape solids and inoculated with a pure strain of wine yeast. Fermentation proceeded at a cool 50-55˚ F to preserve the bright fruit flavors of the grapes. After blending, the wine was stored in temperature-controlled stainless for 4 months seeing no oak aging.
This varietal is one of the few grapes that actually tastes like the wine it becomes. In other words when you taste this grape - the distinctive spiciness and floral character is apparent.
